Orange Creamsicle Chia Seed Pudding

If you’re craving dessert for breakfast, this recipe is for you! This recipe is packed with protein and fiber, and it has a creamy, pudding-like texture. The recipe is vegan, it is super quick and easy, and it is perfect for meal prepping.
Prep time: 10 minutes
Chill time: 2 hours to overnight
Yield: 3 servings
Ingredients:
2 cups soy milk (can sub for any type of milk)
2 servings of vanilla protein powder
2 oranges, peeled
1 tsp vanilla extract
2 tablespoons maple syrup
9 tablespoons of chia seeds, divided
Instructions:
- In a blender, add milk, vanilla protein powder, peeled oranges, vanilla extract, and maple syrup. Blend until smooth.
- In three jars (12 ounces or larger), place 3 tablespoons of chia seeds in each jar.
- Divide the milk mixture between the three jars. Then place the lid on each jar and shake until there are no chia seeds stuck to the bottom of the jar.
- Place in the fridge for at least two hours, or overnight if you are making the night before. This can last in the fridge for the week!
