Pumpkin Muffin

Ingredients:3 cups old fashioned oats2 tsp. baking powder2 tsp. pumpkin pie spicepinch of salt1 large egg1/2 c. pumpkin puree1/2 c. unsweetened almond milk1/3 c. light brown sugar, packed1/4 c. honey1/4 c. unsweetened applesauce3/4 c. dark chocolate chipsDirections:1. Pre-heat oven to 350 degrees. Spray a non-stick muffin pan with non-stick cooking spray.2. In a large bowl mix together all dry ingredients (oats--salt).3. In another bowl whisk together all wet ingredients (egg--applesauce).4. Add dry ingredients slowly into wet ingredients, whisking to combine. Stir in chocolate chips.5. Transfer batter into muffin tins (about 1/4 c. per slot).6.
